Creating an even surface inside the
portafilter is key to a perfect extraction.
If the coffee cake isn’t well levelled, water
will find a less resistant way within the coffee puck and channel through it without
extracting all potential aromas.
To make the puck even and compact, hold the
portafilter on a flat surface while pressing with the tamper and make sure that
there are no cracks.
