Now that you know how to properly store and
grind your coffee beans, it is time for tamping.
Tamping your coffee grind is one of the
most important factors for a proper pre-infusion, but it is often overlooked. Uneven
tamping often leads to channelling in the coffee cake, messing up pre-infusion - an essential phase for extracting all potential aromas in your cup of espresso.
Make sure you are holding the portafilter
level whilst you tamp – all Dalla Corte portafilters have been designed to be
perfectly level when placed on a flat surface. Now press your tamper firmly
enough to create an even
surface. To compact your coffee cake just right, you might need to hit the gym if you can’t apply about 20kg of
pressure! Once you lift the tamper out, make
sure that there are no cracks or holes. Pro-tip: if you want to make sure you have
the right amount of coffee in the portafilter, this is the time to use the
Dalla Corte coffee caliber!
