Dalla Corte is always seeking to be a step further in the coffee world, chasing perfection in every step of coffee extraction. We wanted to make something new, a precision tool that would help any barista, the coffee caliber.
This tool measures precisely how much room there should be between the coffee cake and the dispersion screen at the top. This way we will know for sure that the extraction chamber has been set correctly, in order to provide the best pre-infusion possible.
The tamped coffee in the portafilter will start expanding when it is wet by water. If the coffee cake doesn’t have enough room to expand, it could damage the dispersion screen and create channelling, which would reduce the extraction of aromas. Under dosing instead would make pre-infusion longer, extracting negative aromas.
We created a tool that will help baristas to maintain consistency with each extraction. A reference for beginners as well, to experiment with extraction.
